Super Easy Cocoa Cake!

Heeey! It's been a while hasn't it?!
Yep, i know, but i had a lot to study for my Uni exams.

So today i thought i could share a recipe i tried the other day and turned out delicious!
And, since i'm Italian, you gotta believe me ;)
I tried this recipe because i didn't have much time and ingredients
so i can definitely say this is horrendously simple and fast!
- and obviously, without butter.

COCOA CAKE
without butter.

INGREDIENTS in CUPS:

- 1 2/3 cup flour type 00 (but you can also use all-purpose flour)
- 1/2 cup unsweetened cocoa powder 
- 1 cup white sugar (you can mix white and brown or just brown as you please)
- 2 eggs
- 7 tablespoons vegetable oil (or whatever oil you please, i used corn oil)
- 3/4 cup milk
- 1 tablespoon baking powder
- confectioner's sugar for dusting


INGREDIENTS in GRAMS & MILLILITERs:

- 200g flour type 00 (but you can also use all-purpose flour)
- 60g unsweetened cocoa powder
- 200g white sugar (you can mix white and brown or just brown as you please)
- 2 eggs
- 100ml vegetable oil (or whatever oil you please, i used corn oil)
- 200-230 ml milk
- 1 standard baking powder (16g.)
- confectioner's sugar for dusting 



DIRECTIONS:




Preheat oven to 350° degrees F (180° degrees C). In a large bowl mix the eggs with a fork, add oil and milk and mix it lightly with a whisk (or just a spoon).

Add flour and cocoa (if sifted is better) and sugar, mix until just combined and smooth.



Pour the batter into a prepared pan of 24cm / 9.5 inches diameter. Bake at 350°F/180°C for 30-35 minutes until toothpick inserted in center come out clean.

NOTES:
You can cut the cake in 2 layers so you can put in it whatever you like, like peanut butter, jam, fruit,  cream, nutella..... 
You can also add grated orange peel in the batter to make the cake tastier (or some almonds!)

Best Chocolate Chip Cookies i have ever made!

Hellooouuu!
So yesterday i made these super delicious cookies, i found the recipe on internet but then i changed it and made it healthier. My recipe has NO BUTTER & NO BAKING POWDER! I made them with corn/maize oil (but you can use whatever oil you want to, like vegetable oil) and, to be honest, they came out even better than cookies made with butter, so soft and chewy!
Also, the recipe's SO EASY! :D



Here's the recipe:

Ingredients

- 2 1/2 cups all-purpose flour  (300g.)
- 1 teaspoon baking soda  (5g.)
- 1/2 teaspoon salt  (just a pinch)
- 1 cup vegetable oil  (237ml. - i used corn oil but, like i said, you can use whatever oil you please)
- 1 cup packed brown sugar  (220g. - i put a little less like about 200g.)
- 1/2 cup white sugar   (100g. - i put a little less like about 70g.)
- 2 eggs
- 1 teaspoon almond extract  (5ml.) - optional
- 1 cup semisweet chocolate chips  (about 150g. but you can put less or more as you please)


Directions

Preheat oven to 350 degrees F (180 degrees C). In a small bowl mix together flour, baking soda and salt set aside. In a large bowl, cream together the vegetable oil, brown sugar and white sugar until smooth.
Beat in the eggs one at a time, then stir in the almond extract. Blend in the dry ingredients, mix until just combined and then fold in the chocolate chips. Drop by rounded spoonfuls on baking sheets lined with parchment paper.

(i forgot to take pictures while i was cooking, this is the only one ahaha sorry!)

Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for a bunch of minutes before removing to a wire rack to cool completely (cause they're very soft and friable at first, if you remove them instantly they will crumble!)
