What's wrong with my mind?

Hi!
I’ve been thinking A LOT lately, the main topic is "how the mind works".
How do we know if what we’re thinking is normal? How do we know if something that seems weird to us in a first moment, isn’t actually a normal thing that happens to everyone?

Yeah, i know what you’re thinking… “what the hell are you talking about Cami?”
….I DON’T KNOW. This is just my mind rambling around, and yes sometimes I hate it. Do you know those times when your mind starts thinking and thinking and thinking and it doesn’t seem to stop? And you find yourself thinking “Damn just stop it! STOP THINKING YOU STUPID LITTLE MIND OF MINE!”
I hate it. Sometimes I have a song in the back of my head all the time and it makes me very annoyed and the more i think about it the more the flipping song plays in my head. It’s the worst thing ever, because I guess there is something wrong with my brain, like I get stuck in my thoughts sometimes, so when I have a song or a jingle (even worst) stuck in my head I want it to go away but I can’t let it go away cause I keep thinking about wanting it to go away… does it make sense? I don’t know, I only know that it’s the most annoying thing in the world and lately I got so obsessed over it that I constantly (like every day) have some bloody song in my head.

I don’t remember why I’m talking about this…. Oh yeah, weird things you don’t know if they’re actually normal or if it’s just you being the weirdo that you are!

Ok so…. Just wanted to share these silly thoughts! I hoped it would have made me feel better i guess?!

Super Easy Cocoa Cake!

Heeey! It's been a while hasn't it?!
Yep, i know, but i had a lot to study for my Uni exams.

So today i thought i could share a recipe i tried the other day and turned out delicious!
And, since i'm Italian, you gotta believe me ;)
I tried this recipe because i didn't have much time and ingredients
so i can definitely say this is horrendously simple and fast!
- and obviously, without butter.

Give it a try!




COCOA CAKE
without butter.

INGREDIENTS in CUPS:

- 1 2/3 cup flour type 00 (but you can also use all-purpose flour)
- 1/2 cup unsweetened cocoa powder 
- 1 cup white sugar (you can mix white and brown or just brown as you please)
- 2 eggs
- 7 tablespoons vegetable oil (or whatever oil you please, i used corn oil)
- 3/4 cup milk
- 1 tablespoon baking powder
- confectioner's sugar for dusting


INGREDIENTS in GRAMS & MILLILITERs:

- 200g flour type 00 (but you can also use all-purpose flour)
- 60g unsweetened cocoa powder
- 200g white sugar (you can mix white and brown or just brown as you please)
- 2 eggs
- 100ml vegetable oil (or whatever oil you please, i used corn oil)
- 200-230 ml milk
- 1 standard baking powder (16g.)
- confectioner's sugar for dusting 



DIRECTIONS:




Preheat oven to 350° degrees F (180° degrees C). In a large bowl mix the eggs with a fork, add oil and milk and mix it lightly with a whisk (or just a spoon).

Add flour and cocoa (if sifted is better) and sugar, mix until just combined and smooth.



Pour the batter into a prepared pan of 24cm / 9.5 inches diameter. Bake at 350°F/180°C for 30-35 minutes until toothpick inserted in center come out clean.

NOTES:
You can cut the cake in 2 layers so you can put in it whatever you like, like peanut butter, jam, fruit,  cream, nutella..... 
You can also add grated orange peel in the batter to make the cake tastier (or some almonds!)

Best Chocolate Chip Cookies i have ever made!

Hellooouuu!
So yesterday i made these super delicious cookies, i found the recipe on internet but then i changed it and made it healthier. My recipe has NO BUTTER & NO BAKING POWDER! I made them with corn/maize oil (but you can use whatever oil you want to, like vegetable oil) and, to be honest, they came out even better than cookies made with butter, so soft and chewy!
Also, the recipe's SO EASY! :D



Here's the recipe:

Ingredients

- 2 1/2 cups all-purpose flour  (300g.)
- 1 teaspoon baking soda  (5g.)
- 1/2 teaspoon salt  (just a pinch)
- 1 cup vegetable oil  (237ml. - i used corn oil but, like i said, you can use whatever oil you please)
- 1 cup packed brown sugar  (220g. - i put a little less like about 200g.)
- 1/2 cup white sugar   (100g. - i put a little less like about 70g.)
- 2 eggs
- 1 teaspoon almond extract  (5ml.) - optional
- 1 cup semisweet chocolate chips  (about 150g. but you can put less or more as you please)


Directions

Preheat oven to 350 degrees F (180 degrees C). In a small bowl mix together flour, baking soda and salt set aside. In a large bowl, cream together the vegetable oil, brown sugar and white sugar until smooth.
Beat in the eggs one at a time, then stir in the almond extract. Blend in the dry ingredients, mix until just combined and then fold in the chocolate chips. Drop by rounded spoonfuls on baking sheets lined with parchment paper.

(i forgot to take pictures while i was cooking, this is the only one ahaha sorry!)

Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for a bunch of minutes before removing to a wire rack to cool completely (cause they're very soft and friable at first, if you remove them instantly they will crumble!)

It's Christmas time!

Hi everyone!

So, it's the 22nd of December it's almost Christmas and i'm getting so excited about it cause i love Christmas, i love all the lights and the trees and the smiling people and all the reunions with friends and relatives that i haven't seen for sooooo long.... I mean c'mon Christmas is just too beautiful!

I'm sure there's so many other things i love about Christmas but that's it for now!

YourTea lover

Two days ago my Happy Tea has finally arrived! I'm already happy and i haven't even tried it yet :D


I love the YourTea brand cause i actually felt that something was going on in my guts when i drank their TinyTea Teatox the first time so i decided i wanted to try more and i bought a box of Fertility Tea because i have reeeaaally really really painful periods - or so called dysmenorrhea - and i wanted to try something new & healthy to relieve the pain (i've been taking the pill for like 8 months and it didn't even worked that well so...i stopped taking it) I started drinking just one cup of my Fertility Tea every day and i hope it will work!
Now that i also bought a box of Happy Tea i can probably say that my life is complete ha! Too bad i almost finished my (second) box of TinyTea (actually my mom almost finished it!)
